Steelers Game Day Grub: Lil’ Smokies Wrapped In Bacon

It’s time again to determine what you’re going to feast on while the Steelers are hopefully feasting on some Falcons on Sunday afternoon. The division title is in their sights and hopefully they won’t revert back to losing to NFC South teams with losing records. Meanwhile, you’re going to be hungry. You’re not allowed to eat all the Christmas cookies yet, so what else is going to satisfy your hunger for the game?

Atlanta is known for many different types of food but I’d say mainly the whole state of Georgia is known for peaches. I’m not the biggest fan of peaches and I certainly don’t think “football” when someone presents me with some type of peach cobbler or something of the sort. So let’s throw that idea out the window and just make something tasty, shall we?

What I have for you is quite possibly the best little nugget of food you might eat this football season. It takes some prep time but the payoff is totally worth it. Let’s make some brown sugared, bacon-wrapped lil’smokies! I know you’re already drooling right?

You know the lil’ smokies wieners you find in the grocery store by the hot dogs and other types of sausages. You’re going to want to get the big package of these suckers; they’re going to be a hot item on your tailgate or party menu.

Also get yourself a good package of bacon. It doesn’t have to be super fancy, pricey, thick-cut bacon because you’re going to cut them in pieces to just wrap around the lil’ smokies once. You’ll also need some brown sugar. Pour some in a shallow dish or whatever container would be good for rolling these things around in it.

That’s it! Those are all the ingredients you’ll need. You also need a large baking sheet with a wire rack on top. Cover the bottom of the sheet with foil to minimize the dish washing later on.

Brown Sugar Bacon Lil Smokies

Set up yourself a nice assembly station, possibly at the table where you’ll be nice and comfy because it takes a while to get all these guys wrapped and rolled and ready for the oven, but you’ll definitely enjoy them once they’re done so all the work will be totally worth it.

Cut the bacon slices into thirds so they’re just long enough to wrap around once. Take a lil’ smokie out and wrap the piece of bacon around it and then roll it completely in brown sugar. I  did this first, and secured it with a toothpick but that’s not even necessary, they won’t unravel and you’ll need your toothpicks free to set out with the finished ones.

Once you have the whole pan filled with brown sugar covered pork loveliness, you will put them in a 375 degree preheated oven for at least 20 minutes. Rotate the pan around halfway during the baking to make sure it’s all evenly heating.

Cook them till the bacon is completely done and the sugar is all melted and caramelized. Take them out and cool slightly before you take them off of the rack but don’t wait too long or they’ll stick.

Best part about these babies is that you can serve them warm or at room temperature and it’s basically like bacon/sausage candy. Which is awesome.
