Steelers Game Day Grub: Spinach Artichoke Dip

It’s that time of the week again. Not only are the Steelers hungry for their first playoff berth since 2011, but you’re hungry for something tasty and satisfying to enjoy while you watch the Steeler clinch their first playoff berth since 2011.

You’ve ordered this dozens of times in restaurants and now it’s finally time to learn how to make your own Spinach Artichoke Dip. You can even rationalize it’s healthy because spinach is totally good for you. Just ignore all the cheese we’re going to throw in there. The best part about this dip is that it reheats well and can be made easily in a food processor.

Here’s what you’ll need:

  • 1 box frozen chopped spinach (thawed and drained of all water)
  • 1 cup sour cream
  • ½ cup grated Parmesan
  • 1 cup shredded mozzarella
  • 8 oz. cream cheese, softened
  • 4 garlic cloves, crushed
  • 1 TBS hot sauce (or more if you like it with an extra kick)
  • 1 14oz. can of artichoke hearts, drained
  • Salt & pepper to taste

I use measurements on the parmesan and mozzarella cheese only as a loose guideline to go by. What you do in your own house with your own cheese is nobody’s business. You throw more cheese in there if your stomach can take it.

Spinach Artichoke Dip

You’re going to want to preheat your oven to 350 degrees. Throw everything except for the artichokes and the amount of mozzarella you’d like to sprinkle on the top into a food processer and blend away. Then add the artichoke hearts and pulse a few times.

Pour the mixture into a greased, shallow baking dish. Or, if you’re feeling fancy, you could hollow out a round loaf of bread and bake this in a bread bowl. Then you can eat the container. Those are always the best kinds of containers.

Sprinkle with your reserved mozzarella cheese and bake for about 30 minutes until the cheese is all melted and bubbly and lovely. Serve with anything you want to scoop this up with. Chips, tortilla chips, flat breads, pita chips, crackers, etc. You can even cut up some carrots and celery and dip those suckers in there too.

Think of the next time you’re out at a restaurant and someone wants to order the spinach dip you can blow their friggin minds by just casually saying, “Oh, I can totally make that.” You’re welcome.
